SWEET CHILI GLAZED SHRIMP WITH GINGER LIME BIBB SALAD

This beautiful side dish uses my Ginger Lime Dressing and is simple to prepare and wonderfully delicious. Use it for company as an appetizer or side dish or as an addition to your brunch spread. 

INGREDIENTS

  • 1 lb large shrimp

  • Ghee

  • Kosher salt

  • Sweet chili seafood sauce (S&F brand is recommended)

  • Sriracha

  • 1 head bibb lettuce, washed and put through salad spinner and torn into bite sized pieces

  • 1/2 bag shredded carrots and purple cabbage (optional)

  • 2 large sliced radishes (optional)

  • Fresh herbs like basil or chives

  • Ginger Lime Dressing (see recipe)

INSTRUCTIONS

  1. Make sure shrimp peel, deveined with tails on.  Season with kosher salt.
     

  2. In separate bowl, add several T of sweet chili sauce and a good shot of sriracha, mix well.
     

  3. Heat pan till very hot, and add ghee till smoking, and add shrimp.  Don’t touch, let sear!
    Once shrimp becomes opaque, about two minutes, flip over and cook one more minute.
    Take off heat and add shrimp to bowl with sauce and mix immediately.

     

  4. Squeeze lime juice in pan (where shrimp just cooked) and deglaze ghee and shrimp fond.
    Add mixture to sauce and shrimp and fold together.

    After one minute, take scallops out of pan and put on plate with Mint, Basil & Jalapeño Salsa (optional) and cover with crispy thyme (drizzle with pan butter if desired).  

Time to assemble the dish!

Put Bibb lettuce into large bowl and drizzle with Ginger Lime Dressing, then plate 4 bowls with salt.
Top with thinly sliced carrots, purple cabbage and radishes and place several shrimp on top of each salad.  Dribble small amount of dressing over each salad and top with fresh herbs (basil or chives is my preference.  Serve immediately! 

A FINAL NOTE

Bibb lettuce, also known as butter lettuce, is a light, delicate lettuce that serves as an elegant base for a lot of plated dishes. 

My Ginger Lime Dressing wonderfully compliments the shrimp and can be used as a marinade for both seafood and poultry.
