PREP TIME: 5 MINS + 2-24 hrs marinate

COOK TIME: 60 MINS

SERVES: 4 as a side dish

SWEET, GARLIC LIME PORK CHOPS WITH MANGO SALSA

A summertime favorite! The fresh flavors of lime and mango pair beautifully with pork chops. Serve these with jasmine rice at your next outdoor gathering.

INGREDIENTS

  • 1 lb thin pork chops (can use any thickness but will need to finish thicker ones in oven to 140 degrees)

  • Ghee

For marinade:  

  • 1/2  - 1 c pineapple chunks (using for juice)

  • 1 tbsp garlic paste

  • 1 tbsp ginger paste

  • 1 tbsp lemongrass paste

  • 1 tbsp brown sugar

  • 1 tbsp lime juice

  • 2 tsp fish sauce

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp ground turmeric 

For mango salsa:  

  • 2 ripe mangos, diced (can substitute pineapple or 1 to 1 pineapple to mango)

  • 1/3 c red bell pepper, diced

  • 1/4 c shallots, diced

  • 1 tbsp chives, chopped

  • 1 tbsp lime juice

  • 1 tbsp orange juice

  • Kosher salt and ground black pepper, to taste

  • Jalapeno pepper (optional)

INSTRUCTIONS

  1. Put pineapples, garlic, ginger, shallots, lemongrass, brown sugar, lime juice, fish sauce, cumin, coriander and turmeric in food processor.  Pulse for 20 seconds and pour over protein into air tight plastic bag.  Mix well and make sure all sides have marinade on meat.  Allow to marinade for at least 2 hours, up to 24 hours.
     

  2. Heat cast iron skillet on medium heat, once hot, add ghee, once smoking add pork.  Cook roughly 3 minutes on one side, until caramelized and nicely brown.  Flip over and cook just 1 to 2 minutes more.  Thin chops cook fast!
     

  3. When done cooking, put chop on plate and top with mango salsa, hit of kosher salt & lime juice. Serve immediately and enjoy!

A FINAL NOTE

For ingredients like ginger or lemongrass that are not used with your everyday cooking, prepared pastes can be very helpful! Look for them in the refrigerated section at most grocery stores.
