SERVES: 4-6 as a side dish

ANTIPASTO

Delicious layers of cured meats, cheeses and marinated vegetables. Perfect for any holiday or party!

INGREDIENTS

  • 1/4 lb each salami, capacolla, prosciutto, speck or ham, provolone

  • 1 large mozzarella ball

  • Shaved parmesan reggiano for top

  • Baby spring mix

  • Roasted red peppers

  • Sundried tomatoes

  • Marinated mushrooms

  • Artichokes

  • Pepperoncini

  • Green olives

INSTRUCTIONS

  1. Take a large platter and layer it with green salad (baby spring mix works well)
     

  2. Divide the meats and cheese in two portions and cut into bite size triangles
     

  3. Take the first portion of meats and make an even layer on top of greens
     

  4. Take the first portion of cheese and make an even layer on top of meats
     

  5. Repeat with the second portion of meats
    Repeat with the second potion of cheese

     

  6. Top with a variety of vegetables (cut in bite size pieces if necessary)
     

  7. Top vegetables with fresh mozzarella (cut in bite size pieces)
     

  8. And finish with shaved parmigiano pieces on top
     

  9. Serve with a wonderful tasting EVOO, balsamic vinegar and crusty bread!

A FINAL NOTE

Antipasto goes well with crusty bread such as Italian or even French bread.
